Anderson and a PETA rep said the Maricopa County jail system is a model for jails and prisons across the country in regard to serving healthy, cost-effective, meat-free meals to inmates, according to azcentral.com.

Anderson, a vegan for 20 years, notes the change in food is about striving to be healthier. “It’s about giving them a good diet and more nutrition and changing lives,” she said.

It’s also cost-effective, according to the sheriff’s office, which estimates that removing meat from meals will save as much as $200,000 annually. The vegetarian program has been in place for 16 months.
